NAME
The name: the letter A refers to the Albillo Real. The 3 is the combination of different vineyards with common characteristics throughout the region.
The label: the most representative building of our town, the 15th century Castillo de la Coracera and the inverted crescent of the shield of San Martín de Valdeiglesias.
WE CREATE
5.600 bottles of 0,75 cl.

“This wine is the result of the union of Albillo Real, a native variety from San Martín de Valdeiglesias, with the other representative white variety of Madrid, Malvar. With this elaboration we show the particular characteristics of both”.
HARVEST
Manual harvest in perforated boxes. Weight per box between 15 and 18 kilos. Classification of clusters in the vineyard itself.
VINIFICATION
Cold pre-fermentation maceration for 24 hours. Pressing and fermentation with native yeasts.
AGEING
Refinement with its lees in a steel tank for approximately 4 months. The time it remains on the lees is determined by weekly tastings that are complemented by technical analysis.

The way of cultivation in all our vineyards is the Traditional Agriculture of the region.
No type of systemic product is used for pests. Occasionally, if the year is very rainy, the only pest that can develop is powdery mildew, which is combated with powdered sulfur. As has been done historically. Other pests are not observed in the area. In 2021, a single preventive treatment was applied at the beginning of sprouting.
The fertilizers are organic with a mixture of manure from different animals.
Pruning is entirely manual. The pruning remains are crushed and left in the vineyard to increase the texture of the soil.
In 2021 the yield per hectare was 1,600 kilograms. This gives us a yield of 940 grams/strain.
VIEW
Straw yellow color with golden edges. Clean, shiny and crystalline. When shaking the glass, a clear tear appears, warning of the high glycerin content characteristic of the Albillo Real variety.
AROMAS
Clean, high intensity nose. Very elegant aromas, floral at first to go to pineapples, peaches and a slightly bitter finish.
TASTE
With just the right acidity to provide freshness, light, easy passage.
