NAME
The name: La Pájara is a cycling expression that is used when you have reached the limit of your strength. Extreme fatigue, suffering; depletion of physical and mental reserves. Everyone who has ridden a bike has “enjoyed” it or is going to “enjoy” it.
The label: in addition to a bird, La Pájara, there are several details related to cycling. Find them.
WE CREATE
1.300 bottles of 0,75 cl.

HARVEST
Manual harvest in perforated boxes. Weight per box between 15 and 18 kilos. Classification of clusters in the vineyard itself.
VINIFICATION
Cold pre-fermentation maceration for 24 hours. Pneumatic press, settling for 24 hours. Fermentation in 600 and 500 liter barrels with native yeasts. Batonage (stirring) of lees once a week.
AGEING
Both alcoholic and malolactic fermentation take place in barrels. Aged for at least 12 months in barrels.

The way of cultivation in all our vineyards is the Traditional Agriculture of the region.
No type of systemic product is used for pests. Occasionally, if the year is very rainy, the only pest that can develop is powdery mildew, which is combated with powdered sulfur. As has been done historically. Other pests are not observed in the area. In 2021, a single preventive treatment was applied at the beginning of sprouting.
The fertilizers are organic with a mixture of manure from different animals.
Pruning is entirely manual. The pruning remains are crushed and left in the vineyard to increase the texture of the soil.
In 2021 the yield per hectare was 1,600 kilograms. This gives us a yield of 940 grams/strain.
VIEW
Straw yellow color with gold trim. Clean, bright and crystalline. When shaking the glass, a clear tear appears, warning of the high glyceric content characteristic of the Albillo Real variety.
AROMAS
Elegant, intense aromas without being opulent. Ripe stone fruit with notes of tropical fruits, persimmon, passion fruit. Perfectly integrated toasts from the barrel.
TASTE
Unctuous and velvety palate with creamy nuances and a long, dry finish. Refreshing acidity that allows a very elegant aftertaste.
